Pick off the meat from your leftover supermarket barbecue chook (AKA, the bachelor’s handbag), and jazz it up with some tomato, lettuce and a bit of mayo. Add it to your favourite bread and you’re laughing.
Pepperoni Pasta Salad
An awesome way to use up extra spiral pasta or penne. Cook and cool your pasta. Fry up some slices of pepperoni or chorizo, then add it to a bowl with pitted kalamata olives, capsicum and whatever other veggies you like. Dress the lot with a bit of Italian dressing and you’ll be wondering why you ever bought deli pasta salad. Save time and prep the day/night before.
Peanut Butter Pickle Sandwich
This works best on white crusty bread. It sounds like a strange pregnancy craving, but give it a whirl! Spread peanut butter over bread, then top with dill pickle slices and original chips (plain crisps). Keep the chips aside ‘til serving to maintain the crunch.
Wicked Quick Chicken Noodle Salad
Wash and chop bok choy (the one with fat pale green stems) or Chinese cabbage (wombok), add leftover bbq chook, halved cherry tomatoes, and spring onions. Pizza Pinwheels
Another great one to prepare the night before, simply flick on the oven or air fryer, get out a sheet of frozen puff pastry and put pizza sauce, cheese and your pizza toppings of choice on 2/3s of the sheet, roll it up, slice into 3cm rounds and bake on baking paper.
